The main cause tends to be either through faulty safety switches/thermostats or during the “melting process”, when oil is poured into the frying pans at the beginning of the shift and heated up. If the oil is below the level of the pan’s thermostat, a false reading can occur, allowing the oil temperature to increase to a point when the hot oil vapour ignites. This often occurs when the frier is going about their everyday duties, leaving the range unattended. It is then that you have a major incident on your hands.

The most efficient fire protection is accomplished when nozzles are selected and aimed at specific hazard areas on each appliance. This method typically provides the most economical use of liquid agent, reducing the size or quantity of storage tanks and associated hardware.

Overlapping appliance protection is flexible and simple. Nozzles are arranged in a straight line, providing overlapping agent discharge patterns where appliances can be protected, even if they are replaced or rearranged under the hood

Tethered stainless steel blow off caps prevent ingress of grease to the nozzles in normal circumstances and allow free flow of the agent to the appliances, plenum chamber behind the grease filters and extract ducts in a fire situation. The extinguishing agent discharges over the burning fat, cooling and suffocating it by a process called saponification.

The PH neutral agent will not cause damage to the frying pans and ventilation hood and can easily be cleaned up. An approved SolarFire Systems Engineer will be able to recharge the system and reset the system enabling the shop to resume with full protection.

Ideally fire suppression systems would be installed at the time of purchasing a new range, inside the range manufacturer’s premises, however, more often than not they are retrofitted in the shop late at night or first thing in the morning when the range is not in use and not hot.
